in case you missed it: cake batter blondies.

My “recipe” for Cake Batter Blondies – one that I sort of randomly came up with last year – has become the most-visited post on GML. I say “recipe” because it’s almost too simple to be considered such…yet to this day it’s the treat that I find craving more than almost anything else.

You might find that too.

ingredients:

  • 1 box yellow cake mix
  • 1/4 cup rainbow sprinkles
  • 1/4 cup canola oil
  • 1 egg, beaten
  • 1/4 – 1/2 cup milk

directions: Preheat oven to 350 degrees. Combine the cake mix and sprinkles in a large bowl, then mix in the oil and egg. Add the milk slowly just until the batter is combined – you want it to remain as dense as possible. Place better in a greased 8×8 pan or 8-inch cake pan. Bake for 25-30 minutes or just until the edges turn golden. Let cool for 20 minutes before cutting because the gooey center needs to set. The result will be a decadent, cake-batter texture.

    Do you think this would work with funfetti cake mix (and no sprinkles)?

    Also, one thing I love doing is making regular brownies (from a mix), but chopping up Reese’s to put in the batter before baking. So easy, and it makes the brownies 1000x better.

      Hey Gloria! Some people have left comments saying they used funfetti mix and that it worked…worth a shot!

    I made these with no additional sprinkles using the funfetti mix. I could NOT get mine to cook. I kept putting them back in the oven but the center was still MUSH. They tasted great to me hah but no one else would eat them. Which is fine…but they ended up in the garbage because i was eating them for breakfast, lunch and dinner. They were so gooey that i couldn’t cut them into squares!

    Perhaps I added too much oil! I will try again

      PS! This recipe is alotttt healthier (ER) than the other recipes I found via pinterest. No added sugars or butter compared to the others I found. I like that.

    Ahhh…I’ve been meaning to try this recipe! Thank you for the reminder. (:
    You should try making a version of a diet coke cake or cupcakes! Basically a soda (of your choice) takes the place of the egg/oil/butter/etc. that a boxed cake mix calls for. So simple and delicious. Plus, the flavor possibilities are endless!
