For the past week, I’ve been eating a banana pancake almost every day. While I love me some monster pumpkin pancakes, There’s just something about a fluffy pancake with ooey-gooey bits of banana that gets me all sorts of excited.

Understandably that was my breakfast of choice this morning, but my lazy self didn’t feel like doing all of the dishes (in other words, I despise washing the pancake griddle). I decided to see if my usual pancake recipe would work by baking it in the oven. And what do you know…it did! :) It turned out delicious, and with a super easy cleanup.

ingredients:

  • 1/4 cup pancake mix
  • 1/2 of a banana
  • 1/2 tbsp ground flax
  • 1/4 cup milk (I used coconut milk)
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract

directions:

  1. Preheat oven to 350 degrees**.
  2. Combine all of the ingredients in a bowl, using the back of a fork to mash the banana.
  3. Spray an oven-safe bowl with nonstick cooking spray. Transfer batter to this bowl.
  4. Bake for 18-20 minutes, or until a toothpick comes out clean.

**I’m going to try baking this at 400 degrees next time to cut down on time.

Clearly this wasn’t as quick as the stovetop method, but I was able to finish getting ready while my breakfast was baking away, rather than monitoring whether or not it was ready to flip. And since the cake was in the oven, I wasn’t tempted to “press” it down to cook faster. I was left with a perfectly light and fluffy pancake…in a bowl.

The cleanup? Instead of cleaning a griddle, spatula, mixing bowl, and plate, I washed just two bowls and a fork. Not too shabby!

And…let’s be honest here. I’m pretty much always looking for an excuse to eat out of a bowl :P Topped with Cacao Bliss:

Needless to say, this is a start-your-day-right sort of breakfast.

Now pardon me while I go bake some wheat-free, dairy-free cookies. Yeah, I’m skeptical too.

    That looks so good! You always have the BEST recipes. Lately, I’ve been obsessed with mini pumpkin loaves. I eat them twice a day! So good! Cant wait for that recipe for the wheat-free dairy free cookies. Please share girl! =)

    Oh my goodness, you had me “hook, line and sinker” as soon as I saw the Cacao Bliss drizzled on top. YUM-E!!!

    I do not like to cook at all. It has to be easy to make in 15 minutes or less or I just grab a protein shake/bar/ or cereal HA! Needless to say, I don’t like cleaning up after attempted baking/cooking either.

    Somehow I managed to “fail” Housewife 101. HA!

    It’s a cool idea, but my second favorite part about pancakes (next to consumption of course) is flipping pancakes. I find it so satisfying! But definitely an interesting method.

      hehe yes…flipping can be quite fun :) although, I tend to get impatient and end up with a not-so-perfectly shaped pancake!

    Genius girl!! I so need to try this at home this weekend when I have a little baking dish…and I hear you on cleaning the griddle. I don’t have a dishwasher. It sucks.

    this is amazing. pancakes are my favorite (hellooo, blog name!) but they can be a pain. my life changed when i got two boxes of kodiak cake mix in my birthday box. you just add water, and you can make one serving, or two, or 1.5, or a small one, or whatever you freaking want, just add some vanilla or cinnamon or banana or what have you. still have to wash a dish plus the pan but so, so so good.

    This is incredible. Bananas and pumpkin are my two favorite things in the world - and this recipe seems so easy that there is no reason literally, NOT to try it!

    When it comes to dishes, I’m the MOST lazy. My mom is always complaining that I need to clean the sink or empty the dishwasher!

    I absolutely love this recipe. Have you ever made it the night before and heated it up? Does it taste as yummy? I’m trying to have this for breakies during the week but I find myself short for time!

      I’ve never tried making it the night before, but I guess it’s worth a shot?? The only thing I’d think is that it might get a little soggy. If you try it, please let me know how it turns out! :) xoxo G
