For dinner tonight I had chicken salad with grapes and walnuts atop a bowl of romaine.

To make the chicken salad, I combined:

  • 1 1/2 boneless breasts of cooked chicken, cut into bite-sized pieces
  • 1/4 cup seedless grapes, cut in half
  • 1-2 tbsp (15 grams) walnuts, crushed
  • 1 tbsp canola oil mayonnaise
  • 1-2 tbsp plain Greek yogurt
  • a splash of lemon juice
  • 1/4 tsp kosher salt
  • 1/4 tsp sugar (optional)
  • freshly ground pepper (to taste)

    Thanks for the heads up that Bachelorette starts TONIGHT! I would have been bummed if I missed it… my husband, however, says 😛 (because now he will have to watch it with me) :)

    Sorry you had a yuck breakfast :( I can honestly say I never get food boredom. I am one of those people that can literally eat the same things every day and be fine with it.

    I’ve been bored lately with my food too. I seem to get like this often in the summer… weird! I sure don’t find that chicken salad boring either though, looks deeeeelicious. When I get in these food ruts I usually turn to my very large stash of bookmarked recipes on my computer and find some new food inspiration to cook up!

    I agree with you! I didn’t really prefer Ali too much on the last season. At first I liked her when she went on her first date with Jake. But then it seemed like her main concern was bashing Vienna. While I didn’t prefer Vienna either, I thought it made Ali kinda look like a brat. She even admitted that after she watched her season on tv, she realized she was overly blunt during the show. But alas, I’m like you and I will watch it anyway.

    haha i cant stand her either! trashy tv though will still reel me in..today’s my first day of summer after graduating = relaxing with trashy tv especially the bachelorette

    Food boredom is the worst. Blogs definitely help me with it. Other people’s ordinary eats can seem extraordinary to my bored bored tastebuds. I find it also helps me to just switch up the basic food groups- proteins, grains, fruits/veggies. I’ll buy ones I either haven’t had in forever, or something totally new even if I’m not sure how to cook it (just gotta Google it!)

    Sorry girl, I loooove Ali! Ok, in a totally normal way but you know what I mean.
    I get bored sometimes too.. I kinda got sick of oats for a bit and so I’ve been mixing up my breakfasts with cereal, pancakes, yogurt,… it works! Not exactly TOO crazy but whatever works.
    That chicken salad sounds SO good!

    I’ve been a little bored with my eats lately too. It sounds counterintuitive, but I feel like the more I try to come up with weird combinations, the more I’m left craving the boring stuff. I’ve decided to just eat whatever for awhile and see where it takes me, instead of worrying about creating new stuff at every meal!! Hope you have a great day love xoxo

    It’s easy to get bored, but I generally just scour food blogs to plan exciting recipes for the week. I think I’m the only person in the world that can’t stand reality TV like the Bachelorette. Totally weird, I know.

    I get bored of my food all the time. I just make the same things over and over because I want a quick meal. I end up trying something new once I get so sick of a food.

    I don’t watch the Bachelorette or Bachelor. I can’t stand the fake drama!

    Oooh eggs + avocado - I have got to try that combination!

    I had intended to watch this season of the the Bachelorette but my hubby wanted to watch the NBA playoffs (semi finals…? who knows!) last night. I kind of feel like if you miss the first episode, you shouldn’t even bother with the rest of the season.

    What did you think of the episode? Did it change your opinion or Ali at all?

    I made a conscious effort to not watch the Bachelorette last night. I don’t even want to think of the countless hours I wasted watching “The Bachelor: On the Wings of Love.” I wanted to watch it last night. I did. But opted for a food documentary instead.

    Was Ali as annoying as I thought she would be?

    Yesss, make the banana scramble!!! :) That avo/egg sandwich looks awesome and is right up my alley! I’ve never though of that before…but I did make egg salad with avocado in it once and it was delicious.

    I can’t stand Ali either, but I liked her better after the first episode. She seemed a lot nicer than she did when she was constantly talking about Vienna.
