There’s something about Sunday mornings that makes me want to hop right into the kitchen and start baking. Completely normal…right…?
On the menu for today: Apple Raisin Flax Muffins.
I found the original recipe on Spark Recipes, but tweaked it a bit. The ingredients are:
- 1 cup ground flaxseed
- 1 cup whole wheat flour
- 1 cup oat bran
- 1 cup brown sugar, packed
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp cinnamon
- 2 apples, chopped
- 1/4 cup raisins
- 3/4 cup almond milk
- 1/2 cup egg whites
- 1 tsp. vanilla
Mix together dry ingredients, apple, and raisins. Separately mix milk, brown sugar, egg whites, and vanilla, then pour into dry mixture. Mix all together and fill cupcake papers (which I also sprayed with nonstick spray). Bake at 350 for 20-25 minutes (mine were done at 22 mins). Makes 18-20 regular sized muffins.
This batch turned out absolutely bomb. Clearly it was breakfast material.

I had another muffin a few hours later, this time topped with peanut butter (no surprise there). To die.

Those muffins look awesome! I haven’t been super into GG this season, mostly because little J gets on my last nerve. I do loooove everything about Chuck and Blair though!

i gave up on gossip girl a few epsiodes ago - just too much tv to watch and i think i’m a little too old for it…. but before i threw in the towel i did love blair!
I caught the baking bug yesterday too! I baked three fantastic treats…now I just have to practice a little self restraint to make them last the rest of this week.
I do watch GG, and honestly, I’m not sure who I like right now. For some reason, I most identify with Blair, even though I don’t LOVE her.
Me and you were definitely thinking alike today! I baked as well! I feel so sorry for my future kids because they’re going to ask me, mommy is there anything else to eat in this house besides sweets? haha. Anyway you have good baking skills my girl. I confess, I’ve been watching G.G. since it first aired. It can be a bit racy at times, but they keep me coming back for more with all of those twisted plots. I seem to identify with Jenny the most, hence the name, haha. Poor thing she barely knows where she fits in. That’s how I was as a teen. And boy do I love the cast’s fashion sense! I’d wanna be an extra on the show just so I could get an amazing outfit to wear.
Those muffins look TO DIE, those chunks of apple are making me crave some!! You know you’re a health blogger when you get excited about fruit in your baked goods. Those muffins love so yummy!! I love baking on Sundays! I have the same feelings about going to see The Last Song too! The story looks pretty good (and that guy looks freakin HOT) but Miley as the leading lady? not so sure about! Haha let us know if you liked it!

As for Gossip Girl, no words. I love Serena and Nate and Blair and Chuck. Which is why last Monday’s episode upset me with the whole thing with Blair and Chuck.. is it sad that a TV show upsets me? I think i’m a *little* to involved haha

2. Gossip Girl is SO addictive. Nate is HOT, Chuck gets hotter and hotter in the ‘sick and twisted bad boy’ way as the show goes on… The only guy that seems less hot is Pen Badgley’s character- he seems frumpier!
3. I also want to see Love Song. I liked ‘A Walk to Remember’ so much! Do you remember that movie!??

I’ll tell you this much-Jenny bugs the sh- outta me and I adore Blaire so so much! Nate’s my dreamy man (and is becoming nicer and nicer in every episode), Chuck always appeals to me (for some odd reason) and I’m slowly losing interest in my man Dan…..just bored, I guess!! HAHAHHA I sound like a crazy person! Oh well
Kind of drooling over that muffin + butta (and peanut butta) shot. Like seriously, get outta town or come visit me and bring muffins with!
